Anchovies caught in the Cantabrian Sea are processed in Getaria, a historic Spanish town known for its fish preservation. Once cleaned and selected, they are salted by our master craftsmen, and once they have reached the right ripeness, they are filleted by hand. Maintaining the cold chain allows us to reduce salinity and produce sweet, delicate anchovies.
